Pulinji


Ingredients

Tamarind water - 1cup
Green chilly - 5
Garlic - 10
Ginger - 1 big
Red chilli powder - 1 teaspoon
Turmeric powder - 1/4 teaspoon
Pepper powder - 1/4 teaspoon
Jaggery - 1 1/2 big piece
Ellu or gingely seed (til)- 1/4 teaspoon
Rice - 2 teaspoon
Fenugreek - 1/4 teaspoon
Hing - 1/4 teaspoon
Salt
Oil
Dry red chilli - 4
Curry leaves
Mustard seeds

In a mud pot, add tamarind water. When  it starts to boil, add finely cut green chillies, ginger and garlic. Meanwhile heat till, rice and fenugreek in a pan. Saute it for two minutes. Switch off the flame. Once it's cold, grind it to fine powder. Add this to the pot. Mix it well. Add red chilli powder, turmeric and pepper powder to this mixture. Add jaggery paste to this. Add salt and Hing powder. Cook it for 10- 15 minutes. For tampering, add oil in a pan. Once it's hot, add mustard seeds, Curry leaves, 1/4 teaspoon fenugreek seeds and dry red chilli. Mix it with pulinji. it's normally tasty after few hours or even better the next day. Special thanks to Rakhi's Mom for the recipe. Couldn't take better pictures as I was in hurry. Please try this recipe... it's a very tasty traditional Kerala dish. And very common during Onam festival. It can be used like a pickle.

Veg Pulav

Ingredients

Biryani Rice - 3 cups
Water for rice - 6 cups
Potato - 1
Beans - 5
Green peas - 20
Carrot- 1
Potato - 1
Onion - 2
Tomato - 1
Cardamom  - 5
Cloves  - 5
Cinnamon  - 5
Coriander  leaves - 1 cup
Mint leaves - 1 cup
Ginger garlic paste - 1 tablespoon
Green chilly - 4
Lemon -1/2
Coconut milk  - 1 cup
Water - 1/2 cup
Oil
Salt



In a cooker, add 4 tablespoon of oil. Add all the spices, cinnamon,  Cardamom and cloves. Saute it for a minute . Now add finely sliced onions. Saute it until it turns golden color. After this add  sliced tomato and ginger garlic paste. Saute it for 2 minutes. Now add all the vegetables to this. Carrot, beans , potato and green peas. Let it cook for a minute. Meanwhile mix green chilly,  mint leaves and coriander leaves in a blender. Add 1/2 cup water and make it a thick paste. Add this paste to the vegetable mix and saute well. Also, add coconut milk to this. Finally add rice and water to this. Salt as per taste. Pressure cook it for two whistles. Open the cooker after ten minutes.  Add half lemon juice to this and mix well. This is karnataka style veg pulav. And is  very easy to make.

My Favourite " RASAM "

Ingredients

Cumin seeds - 1 teaspoon
Fenugreek - 1 teaspoon
Dry red chilli - 3
Turmeric powder - 1/2 Teaspoon
Coriander powder - 1 tablespoon
Pepper powder - 1 teaspoon
Shallots - 6
Garlic  - 6
Ginger - 1
Green chilly - 1

Tomato  - 1
Tamarind water - 1/2 cup
Oil
Mustard - 1 teaspoon
Salt - 1 teaspoon
Coriander leaves
Curry leaves

Heat a pan. Add coriander powder,  pepper powder, cumin seeds , turmeric powder, dry red chilly and fenugreek. Saute it for one to two minutes in medium flame. Switch off the flame. Grind this masala  along with tomato, shallots,  green chilly, ginger and garlic to a thick paste. In another pan, add one tablespoon of oil. Add mustard to this. Now add the masala paste to it . Let it cook for 2 minutes. Finally add salt,  tamarind paste , coriander leaves  and curry leaves.  Add 1/2 cup of water,  if you like little gravy. Switch off the flame after 2 -3 minutes.

It's one of my favourites from my childhood. Often i used to take Rasam and egg burji to school and it's one of my mom's special recipe :). BTW, I forgot to take a good pic. I guess I should post this for my school mates. They used to like my rasam hence specially dedicated this recipe for my school friends :) and of course  for me to refer later :)
