Potato Fry

Ingredients


10-12 Baby potatoes
1/2 cup of shallots
1/2 teaspoon Mustard seeds
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon Coriander powder
1/2 teaspoon Sambhar powder
1 teaspoon red chili powder
1/2 teaspoon garam masala
Salt
Oil
Curry leaves
Coriander leaves

In a pressure cooker, cook peeled potatoes with very less water and little salt just for two whistles. In a pan ad 1 table spoon of oil. Once the pan is hot add mustard seeds and then cumin seeds. Add mashed shallots and sauté it until it becomes brown color. 



Now add all the masala ingredients. Add turmeric powder, red chilly powder, garam masala and Sambhar powder. Sauté this for a minute and later add half cooked potatoes in it. Add little salt as we have already added little while cooking potatoes. Cover and cook it for about two -3 minutes. Finally add coriander leaves and curry leaves. 

Malabar Egg Curry

Ingredients

3-4 boiled eggs
2 Chopped onions
3 tomatoes chopped
2-3 green chilies
1 teaspoon of ginger2-3 cloves of garlic
1 tsp red chilly powder
1 table spoon Garam masala powder
1/2 teaspoon of turmeric powder
2 table spoon Coriander powder
Salt
1/2 cup coconut milk
1/2 cup water
Curry leaves
Coriander leaves

Heat one table spoon of oil in a pan. Add finely chopped onion. Saute the onions until it becomes golden brown color. Now add finely chopped tomatoes. Add curry leaves and green chilly to it. Saute it for 3-4 minutes.  After this add all the masala ingredients that is turmeric powder, red chilly powder, garam masala and coriander powder.  Cook it for a minute or two. Now add 1/2 cup of water and cook it in medium flame for 2- 3 minutes. Add the coconut milk to it. Cook for a minute and finally add eggs and coriander leaves. Malabar egg curry is ready. :) Add less water if you don’t want much gravy. This is Kerala special Malabar curry which goes well with Appam and Kerala Parotta. I tried this on a weekday after office and you know what there were only two eggs in the fridge. I know it is clear in the pic :) but you should at least use 3-4 eggs so that the gravy tastes yummy with coconut milk. Try it out. :)

Panneer Capsicum Masala

Ingredients


Paneer ( Cottage Cheese ) – 200-250 grams
Ginger-1 teaspoon
Garlic cloves-5-6
Green chilly-2
Coriander powder-1 teaspoon
Dry Red chilly-3
Tomatoes-3
Capsicum-1
Garam masala-1/2 teaspoon
Oil
Salt
Coriander Leaves

Heat oil in a pan. Add finely cut ginger and garlic. Sauté it for a minute. Add finely chopped tomatoes and green chilly and let it cook for 2-3 minutes.


 

Mix coriander powder and red chilly in a mixer and make fine powder. Use coriander seeds instead of coriander powder if available at home J. Add this powder in the tomato paste. After this add finely cut capsicum and cook it for 2-3 minutes. Finally add paneer, little salt and coriander leaves.  Cover the lid and cook this for 2 minutes.
