Ingredients
3-4 boiled eggs
2 Chopped onions
3 tomatoes chopped
2-3 green chilies
1 teaspoon of ginger2-3 cloves of garlic
1 tsp red chilly powder
1 table spoon Garam masala powder
1/2 teaspoon of turmeric powder
2 table spoon Coriander powder
Salt
1/2 cup coconut milk
1/2 cup water
Curry leaves
Coriander leaves
Heat
one table spoon of oil in a pan. Add finely chopped onion. Saute the onions
until it becomes golden brown color. Now add finely chopped tomatoes. Add curry
leaves and green chilly to it. Saute it for 3-4 minutes. After this add all the masala ingredients
that is turmeric powder, red chilly powder, garam masala and coriander powder. Cook it for a minute or two. Now add 1/2 cup
of water and cook it in medium flame for 2- 3 minutes. Add the coconut milk to
it. Cook for a minute and finally add eggs and coriander leaves. Malabar egg
curry is ready. :) Add less water if you don’t want much gravy. This is Kerala
special Malabar curry which goes well with Appam and Kerala Parotta. I tried this on a weekday after office and you know what there were only two eggs in the fridge. I know it is clear in the pic :) but you should at least use 3-4 eggs so that the gravy tastes yummy with coconut milk. Try it out. :)
