Rajma Masala

Ingredients


Rajma - 100 grams
Onion - 1
Tomato - 1
Ginger  - 1 small
Garlic - 2 cloves
Red chilly powder - 1 tsp
Coriander  powder - 1 tsp
Garam masala - 1 tsp
Spices powder - 1 tsp
Fennel seeds - 1/2 tsp
Coconut milk  - 1/2 cup

Coriander leaves
Oil
Salt


Pour 2 cups of water in a large bowl. Soak Rajma in it for 8 hours or overnight. Keep it aside. In a pan add little oil. Once it is hot, add onion, ginger garlic and saute it for two to three minutes. Later add chopped tomatoes and saute it for two minutes. Now add all the masala powder. Meanwhile in a pressure cooker,  add 2 cups of water, soaked rajma and a little salt. Pressure cook it for three whistles. Finally add this to the masala in the pan along with coconut milk and garnish it with corainder leaves. Cook it for two to three minutes in low to medium flame. It goes well with chapatti or roti. Soya bean Curry

Ingredients

Soya bean - 100 grams
Coconut - 1 cup
Onion -1
Tomato - 2
Green chilly  -2
Ginger - 1 small
Garlic - 2 cloves
Red chilli powder - 1 tsp 
Coriander powder - 2 tsp 
Cumin powder - 1 tsp 
Garam masala - 2 tsp 
Fennel seeds - 1tsp
Spices powder - 1 tsp
Oil
Salt
Curry leaves
Coriander leaves


Soak soybean in 1 cup hot water for 10 - 15 minutes. In a pan, add little oil.  Once it is hot, add curry leaves, ginger, garlic, green chilly and saute if for two minutes until the raw smell goes. Add finely sliced onions. Saute it until it turns golden brown color. Add tomatoes and saute for two to three minutes. Now add all the masala. Red chilly, garam masala, coriander powder, cumin powder, fennel seeds and spices. Cook this for two minutes. After this add little water and soaked soybean to the masala . Cover the lid and cook it for two minutes. Finally add coconut milk and coriander leaves. Cook for two minute's in low to medium flame. You can try this with ghee rice or for breakfast with puttu, pathiri and appam.

Paneer Kuruma

Ingredients



Paneer - 100 grams
Onion -1
Tomato  - 1
Potato  - 1
Carrot - 2
Green peas  - 50 grams
Green chilly - 4
Ginger - small piece
Garlic - 3 cloves
Grated coconut - 1/2 cup
Spices powder - 1 teaspoon (cardomom, cinnamon, cloves)
Fennel seeds - 1/2 teaspoon
Coriander powder - 1 teaspoon
Pepper powder - 1/2 teaspoon
Oil - 1 tablespoon
Salt
Curry leaves 
Coriander leaves


Grind coconut and green chilies in 1/4 cup water to a fine paste. Keep it aside. Cut vegetables in small pieces. In a pressure cooker, add all the vegetables, 1/2 cup water, salt and cook it for a whistle or two. In a pan, add little oil. Once it is hot, add coriander leaves, finely sliced onions and sauté it until it turns golden color. Add chopped tomato into it. Saute it again for two minutes. Add fennel seeds and coriander powder to this. Now mix the half cooked vegetables and cook it for a minute. Finally add coconut paste, spices powder, coriander leaves and paneer. Let it cook for two to three minutes. Paneer veg kuruma is all set to have. Try with  ghee rice or as a breakfast side dish. Make sure not to add much water as kuruma is always tasty when it is thick without much gravy. First time am trying kuruma with paneer. You can always try adding vegetables of your choice. Egg Masala

Ingredients

Eggs - 2
Onion - 2
Tomato - 2
Green chilly - 2
Ginger - 1 small piece
Red chilly powder - 1 teaspoon
Turmeric powder - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Garam masala  - 1/2 teaspoon 
Curry leaves
Spices powder  - 1/2 teaspoon
Mustard seeds - 1 teaspoon
Coriander leaves
Oil - 1 tablespoon
Salt

Boil eggs in water for 15 - 20 minutes in medium to low flame. Add little salt in it. Keep it aside to cool. Now heat a pan. Add little oil in it. Once the oil is hot, add mustard seeds and curry leaves. And add sliced onions and saute it until it turns golden color. Then add chopped ginger and curry leaves. Saute it again. After two minute's add finely cut tomatoes and let it cook for two to three minutes. Saute it in between. Once oil start to separate from tomatoes, add all the masala powder in the oil where it is visible in the pan. So that the raw smell of the masala goes out quickly. Keep it in oil for 1 minute. Slowly start mixing everything. And allow it to cook for a minute in low flame. Add 1/2 cup water to this. Close the lid and let it cook for 3 minutes in medium flame. Finally add boiled eggs. Ensure to Slit the eggs and add it in masala and cook for a minute or two. Egg masala is ready. It's an easy recipe for breakfast and it goes well with pathiri, appam and chapatti. Make sure to use very less water as we don't need gravy for this. Add salt, curry leaves and coriander leaves at the end.



Am so happy that I got some time to publish this post after a long time. I guess am posting something after 2 - 3 months.  Because we recently shifted to a new apartment and was busy with my new job. :) in fact I tried lot of recipes in last few months and have taken pics as well. But couldn't post it as I was lazy as usual...just kidding! it's all cos of lack of time! Nothing else...:)
