Cauliflower Egg Poriyal

Ingredients

Cauliflower  - 1 or half
Green  chilies  - 3 - 4
Onion  - 1
Cumin seeds - 1 teaspoon
Mustard seeds
Egg -3 - 4
Turmeric  powder  - 1 teaspoon
Cumin powder  - 1 teaspoon
Red chilly  powder  - 1/2 teaspoon
Salt
Oil
Coriander  leaves
Curry leaves
Pepper  powder  - 1 teaspoon

In a pan, cook finely  cut cauliflower for 2-3 minutes.  Drain water  completely and keep  it aside. In the same pan, add little  oil. When oil is hot, add mustard  seeds, Cumin seeds and curry leaves. Once mustard starts spluttering  add green chilies and finely chopped  onion in it. Saute it until onion turns golden  brown in color. Now add half cooked  cauliflower  florets in it. Add all  the  masala  ingredients which includes  turmeric  powder, pepper  powder,  red chilly  powder and Cumin powder. Saute it for a minute. Add salt in it.
Finally add the beaten  eggs and salt if required. Don't stir it for a minute. Once egg starts covering  cauliflower,  mix it well. Add finely chopped  coriander  leaves. Cauliflower egg poriyal is ready to attack. :) It was so tasty. I liked it so much as cauliflower is one of my favorite. I mean it's a favorite dish for almost all the vegetarians though am a half vegetarian. :) Everyone should  try out this since its very easy to prepare and tasty recipe as well. :)

Paneer Cutlet

Ingredients

Paneer-250 grams
Onion -1
Green  chilies -3-4
Pepper  powder -1teaspoon
Turmeric  powder -1teaspoon teaspoon
Ginger garlic paste -1 teaspoon
Potato-2
Cumin seeds- 1 teaspoon
Salt
Oil
Coriander  leaves

In a bowl,  mix all the ingredients which includes boiled and  mashed  potatoes, finely chopped  onion,  green  chilies,  turmeric  powder, pepper  powder, salt, ginger  garlic paste, finely  chopped  Paneer cubes, corn flour and coriander  leaves. Now make round shapes out of this. Heat oil in a pan, and shallow fry this in medium to low flame. Have Paneer  cutlets  with ketchup.

Kadukka Fry (Kallummakai or Mussels Fry )

Ingredients

Mussels - 500 grams
Turmeric powder - 1 tablespoon
Red chilly powder-2 tablespoon
Salt
Oil- 3 tablespoon



Clean mussels three to four times in water if you are buying it without the shell. In a bowl, add mussels, turmeric powder, red chilly powder and salt. Mix this well and keep it aside for 10-15 minutes. In a pan, add oil. Once the oil is hot, shallow fry the mussels. You can add onions for taste. This is really famous in Calicut, Kerala. It is also called Malabar Kadukka fry. In some places, mussels are also known as Kallumakai. Its an awesome dish and once tasted you will never stop having this. :) This is one of my favorite dish.

Tea cake (Without Butter)

Ingredients



All purpose flour -1 1/4 cup
Sugar-1 1/2 cup
Eggs-2
Vanilla extract- 1 teaspoon
Baking powder -1 teaspoon
Vegetable oil-3/8 cup
Milk-1/2 cup

In a bowl beat eggs and sugar until it becomes fluffy.  After this add all purpose flour, milk, vanilla essence, baking powder and oil. Mix this with a hand mixer. Don't over beat it. Once it is ready, pour the batter in a 9 inch cake pan or a rectangular cake mould.


Preheat the oven to 180 degree Celsius. Bake it for about 40-45 minutes or until a tooth pick inserted in the center of the cake comes out clean.
