Tea cake (Without Butter)

Ingredients



All purpose flour -1 1/4 cup
Sugar-1 1/2 cup
Eggs-2
Vanilla extract- 1 teaspoon
Baking powder -1 teaspoon
Vegetable oil-3/8 cup
Milk-1/2 cup

In a bowl beat eggs and sugar until it becomes fluffy.  After this add all purpose flour, milk, vanilla essence, baking powder and oil. Mix this with a hand mixer. Don't over beat it. Once it is ready, pour the batter in a 9 inch cake pan or a rectangular cake mould.


Preheat the oven to 180 degree Celsius. Bake it for about 40-45 minutes or until a tooth pick inserted in the center of the cake comes out clean.

Paneer Potato Cheese balls

Ingredients
Paneer (Cottage Cheese)-200 grams
Pepper powder -1/2 teaspoon
Cheese-50 grams
Boiled Potato-1
Coriander leaves
Corn flour - 2 tablespoon
Salt
Oil

In a bowl,  mix finely sliced paneer, mashed potato, pepper powder, coriander leaves, corn flour and little salt. Make round shape using this mixture by keeping cheese cubes in the center. Now heat oil in a pan and fry these paneer potato cheese balls until it becomes golden brown color. Try this with ketchup.

Very easy to make recipe but I would suggest you to be little careful while frying. I was thinking to wear a helmet. I know its below average joke :)

Try adding 1-2 green chilies if you want to make it bit spicy. Also try using bread crumbs instead of corn flour.

Paneer Chilli

Ingredients


Paneer (Cottage Cheese) - 200 gms
Onion -1
Ginger -1 small piece
Garlic -6 cloves
Capsicum-1
Green chilli -2
Pepper powder-1/2 teaspoon
Soya sauce - 1/2 teaspoon
Green chilli sauce -1 teaspoon
Tomato sauce - 1 teaspoon
All Purpose flour - 2 tablespoon
Corn flour -2 tablespoon
Water - 4 tablespoon
Oil - 2 tablespoon
Salt

Soak paneer in a bowl of warm water. Drain off the water after five minutes and cut ito into cube shapes. In a bowl, add two tablespoon of all purpose flour, 1 tablespoon of corn flour, black pepper powder and little salt. Mix this well with 2 tablespoon of water. Now add paneer cubes to this mixture. In a pan, heat oil and fry these paneer cubes until it becomes golden color. Keep the fried paneer aside. Now we need the remaining corn flour paste for the gravy. Add two tablespoon of water to it and keep it aside. In a pan add little oil and add finely chopped ginger, garlic, green chilli. Saute it well. After a minute, add onion to this and saute it until it turns light brown in color. Now add capsicum and cook it for two to three minutes. Add soya sauce, tomato sauce, green chilli sauce and little salt to it. Add the corn flour mixture to this. Finally add fried Paneer. And mix it well. Paneer chilly is ready to serve. :)

Paneer 65

Ingredients


Paneer (Cottage Cheese) - 200 grams
Onion-1
Curry leaves
Red chili powder - 1 teaspoon
Garam Masala powder -1 teaspoon
Sambhar powder -1/2 teaspoon
Coriander powder -1 tablespoon
Chicken masala - 1 teaspoon
Ginger Garlic Paste - 2 tablespoon
Salt
Curd - 1 tablespoon
Water - 7 tablespoon
Coriander leaves

In a bowl mix all the masala ingredients.  That is mix red chili powder, garam masala, chicken masala, Sambhar powder and coriander powder.  Add little salt and water to get a thick paste.

Cut paneer into square shapes and mix it well with the paste. Prick the paneer cubes using a fork. This helps the paneer to absorb the masala. In a hot pan, add some oil and deep fry these paneer cubes until it turns golden brown in color.  In another pan, add two tablespoon of oil and saute the sliced onions. Once it becomes golden brown color, add 2 teaspoon of red chili powder, little salt and curd. Saute it for a minute. Finally add the deep fried paneer into this and cook it for two minutes. Garnish it with coriander and curry leaves.

Potato Fry

Ingredients


10-12 Baby potatoes
1/2 cup of shallots
1/2 teaspoon Mustard seeds
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon Coriander powder
1/2 teaspoon Sambhar powder
1 teaspoon red chili powder
1/2 teaspoon garam masala
Salt
Oil
Curry leaves
Coriander leaves

In a pressure cooker, cook peeled potatoes with very less water and little salt just for two whistles. In a pan ad 1 table spoon of oil. Once the pan is hot add mustard seeds and then cumin seeds. Add mashed shallots and sauté it until it becomes brown color. 



Now add all the masala ingredients. Add turmeric powder, red chilly powder, garam masala and Sambhar powder. Sauté this for a minute and later add half cooked potatoes in it. Add little salt as we have already added little while cooking potatoes. Cover and cook it for about two -3 minutes. Finally add coriander leaves and curry leaves. 

Malabar Egg Curry

Ingredients

3-4 boiled eggs
2 Chopped onions
3 tomatoes chopped
2-3 green chilies
1 teaspoon of ginger2-3 cloves of garlic
1 tsp red chilly powder
1 table spoon Garam masala powder
1/2 teaspoon of turmeric powder
2 table spoon Coriander powder
Salt
1/2 cup coconut milk
1/2 cup water
Curry leaves
Coriander leaves

Heat one table spoon of oil in a pan. Add finely chopped onion. Saute the onions until it becomes golden brown color. Now add finely chopped tomatoes. Add curry leaves and green chilly to it. Saute it for 3-4 minutes.  After this add all the masala ingredients that is turmeric powder, red chilly powder, garam masala and coriander powder.  Cook it for a minute or two. Now add 1/2 cup of water and cook it in medium flame for 2- 3 minutes. Add the coconut milk to it. Cook for a minute and finally add eggs and coriander leaves. Malabar egg curry is ready. :) Add less water if you don’t want much gravy. This is Kerala special Malabar curry which goes well with Appam and Kerala Parotta. I tried this on a weekday after office and you know what there were only two eggs in the fridge. I know it is clear in the pic :) but you should at least use 3-4 eggs so that the gravy tastes yummy with coconut milk. Try it out. :)

Panneer Capsicum Masala

Ingredients


Paneer ( Cottage Cheese ) – 200-250 grams
Ginger-1 teaspoon
Garlic cloves-5-6
Green chilly-2
Coriander powder-1 teaspoon
Dry Red chilly-3
Tomatoes-3
Capsicum-1
Garam masala-1/2 teaspoon
Oil
Salt
Coriander Leaves

Heat oil in a pan. Add finely cut ginger and garlic. Sauté it for a minute. Add finely chopped tomatoes and green chilly and let it cook for 2-3 minutes.


 

Mix coriander powder and red chilly in a mixer and make fine powder. Use coriander seeds instead of coriander powder if available at home J. Add this powder in the tomato paste. After this add finely cut capsicum and cook it for 2-3 minutes. Finally add paneer, little salt and coriander leaves.  Cover the lid and cook this for 2 minutes.
